We made pizzas some time back for dinner. It was so fun and felt so happy when everyone liked the pizzas.
Duration : 5 hours ( to make the base, sauce and everything else )
Tomato sauce :
1/2 cup chopped onion
2 tablespoons minced garlic
2 tablespoons oil
1 cup chopped fresh tomato
6 ounces tomato sauce
8 ounces tomato paste
1 teaspoon salt
2 teaspoons oregano
2 teaspoons basil
1/8 teaspoon pepper
Directions :
1. In a large pot saute onion garlic in oil. Add in the remaining ingredients, stir and allow it to simmer for 30 minutes. Stir occasionally from time to time.
Base :
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon sugar
1 1/2 cups warm water (105°F-115°F)
2 1/4 teaspoons of active dry yeast
3 1/2 cups of all purpose bread flour
Directions :
In the large bowl of a mixer. Sprinkle on the yeast and let sit for 5 minutes until the yeast is dissolved. Stir to dissolve completely if needed at the end of 5 minutes. Mix in the olive oil, salt, sugar and flour on low speed for about a minute. Knead on low to medium speed, until the dough is smooth and elastic, about 10 minutes. If the dough seems a little too wet, sprinkle on a bit more flour.
Place ball of dough in a bowl that has been coated lightly with olive oil. Turn the dough around in the bowl so that it gets coated with the oil. Cover with plastic wrap. Let sit in a warm place (75-85°F) until it doubles in size, about 1 to 1 1/2 hours (or several hours longer, a longer rise will improve the flavor). If you don't have a warm spot in the house you can heat the oven to 150 degrees, and then turn off the oven. Let the oven cool till it is just a little warm, then place the bowl of dough in this warmed oven to rise.

Toppings :
1 green pepper
1 red pepper
1 can of pineapple
2 pork garlic sausage
2 cheese sausage
150 g of ham
parmesan cheese
pizza topping cheese
mozzarella cheese
Here's the fun part, decorate your pizza with all the toppings! After that pop your pizza into the oven for 15-20 minutes.

ReplyDeleteWe love to do pizza for parties — especially pizza on the grill. My friend Mary taught me a great method: make the dough a few hours ahead of time, and portion it into single-person pizzas. Roll each portion of dough into a little ball, and place it in an oiled muffin tin. When it’s time for cooking, give each person a dough ball to stretch out to the size and shape they want, and set up toppings to mix and match.
